מדליקים תנור ל – 200 מעלות חום. מרפדים תבנית בנייר אפיה, מרססים את נייר האפיה בתרסיס שמן, פורסים 2 חצילים לאורכם לפרוסות בעובי 1 סנטימטר, מניחים את פרוסות החצילים על נייר האפיה, מרססים את פרוסות החצילים בתרסיס שמן, מפזרים חצי כפית מלח ואופים כ – 15 דקות מכל צד / עד שפרוסות החצילים רכות וזהובות.
בינתיים כשהחצילים בתנור פורסים לרבעים 25 עגבניות שרי ומעבירים לקערה, חותכים 6 מלפפונים חמוצים במלח ופלפל חריף ירוק טרי לקוביות קטנות ומוסיפים לקערה.
מוציאים את פרוסות החצילים מהתנור, כשהן מתקררות חותכים אותן לריבועים לא גדולים ומוסיפים לקערה.
קוצצים דק עלים מרבע חבילה פטרוזיליה ומוסיפים לקערה. מוסיפים 2 כפות שמן זית עדין, כפית שום כתוש, מיץ מחצי לימון, חצי כפית מלח, מערבבים, טועמים, אם חסרה לכם מעט מליחות תוסיפו עוד רבע כפית מלח.
